The setting of your cultural and culinary experience will be either a 16th century restored water mill in the countryside of Pistoia or a charming country villain the wine area of Carmignano, overlooking Florence.

The English speaking Chef, who is also a wine sommelier , will assistyou to compose and create the day menu and, furthermore, to pair food with appropriate wines. There will be a range of wines selectedfrom the main wine producers of Tuscany, Umbria and Veneto.

In case of 2/3 day cooking experience, hands–on classes can be scheduled either in the mornings or afternoons and, on each themed course, Giuseppe will teach and assist you how to prepare the appetizers, first, main and dessert courses. Emphasis is placed on practical technique as well as the healthier use of extra virgin olive oil in cooking and aesthetic presentation.

deep fried zucchini blossoms with buffalo mozzarella, pesto sauce – mixed bruschettas - Prosecco wine

First course:
Ravioli with swiss chard and ricotta, fresh spicy tomato Vermentino of Bolgheri

Main course:
Pork medallions  with artichokes hearts - roasted potatoes with herbs, garlic and extra virgin olive oil.


Porcini mushrooms timbale with Pecorino cheese fondue Vernaccia di S. Gimignano

First course:
Ribollita alla toscana (Typical vegetable soup with bread) Chianti classico 

Main course:
Char- coal grilled rooster  with herbs - Spinach timbale and sautéed bell peppers.


Leek and smoked ham tart with grilled provola cheese – cured pork loin in extra virgin olive oil - Wine Franciacorta brut

First course:
Risotto with truffles

Main course:
Broiled sirloin steak with balsamic vinegar and rocket salad with grape tomatoes – Wine Vino Nobile di Montepulciano

Hot chocolate soufflé with vanilla icecream  - Wine Moscato spumante


The basics for hand-made pasta Ravioli with Ricotta, goat-cheese, eggplants Ravioli stuffed with chard and Ricotta, "Crespelle" stuffed with diced vegetables and Provola, Sauces and garnishes.


The yeast and the starters Flours and the gluten. Ingredients. "Schiacciata" with extra virgin olive oil, The "Calzone" with Buffalo Mozzarella, "Schiacciata" with olives and onions.
